In 2012, Sam Calagione met The Flaming Lips when they performed at the Firefly Music Festival in Dover, Delaware. That association led the craft beer innovator to team up with the band to create a new beer from his Dogfish Head Craft Brewery, Sam told attendees at SAVOR 2018 in DC on Friday.

Interview: Chef Adam Dulye of the Brewers Association (@ SAVOR: An American Craft Beer & Food Experience 6/1-6/2/18)

The Brewers Association will present the 11th edition of SAVOR as the premier craft food and pairing event in the United States at the National Building Musuem, Friday, June 1, and Saturday, June 2. With each brewery offering at least two beers, SAVOR 2018 will feature more than 180 beers from across the country. (VIP tickets have sold out, but general admission tickets remain for both nights.)

And each of those beers is accompanied by a food pairing, devised by Chef Adam Dulye and his team. SAVOR recently published the list of food and beer pairings, and Parklife DC caught up with Adam to get more insights into how food and beer come together to make SAVOR such an exciting experience.

Around Town: SAVOR @ National Building Museum — 6/3/16

Stouts. Porters. As I walked the National Building Museum’s expansive floor, pausing at various brewery tables to read the cards flaunting a beer name/style and its tasty looking small bite pairing, it struck me. There are a lot of stouts and porters for a summer event. And that is fine by me.

At the 9th Annual SAVOR (An American Craft Beer & Food Experience) on Friday, June 3rd, if I had counted all the beers I tried, I suspect 75% or more were on the dark side.

Of the 76 craft breweries on hand (from 28 states), 26 of those chose to pour a stout (16 breweries) or a porter (10). Compared to the far more common approach to feature IPAs (33) and other lighter, summer styles.

Some of my favorites:

  • Vanilla Java Porter (Atwater Brewery, Michigan)
  • Stavropol Russian Imperial Stout (Confluence Brewing Company, Iowa)
  • Sérendipité Stout (Parish Brewing Co., Louisiana)
  • Salted Caramel Imperial Stout (Southern Tier Brewing Co., New York)
